With no operating fans, they produce very low noise and consume less energy, keeping electricity costs under control. Fourth, they have a low failure rate. The simple structure is not prone to damage, with easy maintenance and relatively cheap spare parts.

At the same time, direct-cooled cake display cabinets also have obvious drawbacks. The primary issue is uneven temperature. Areas near the refrigeration tubes have lower temperatures, while the center and upper parts of the cabinet are warmer, resulting in large temperature differences. Besides, frost and ice easily build up on the inner walls, requiring regular manual defrosting, which brings a poor user experience.

In addition, they cool slowly. The temperature inside rises quickly after the cabinet door is opened for restocking, and it takes a long time to cool back down. They deliver poor preservation stability in high-frequency business scenarios, and food odors can easily mix together.

2. Air-Cooled Cake Display Cabinets

Air-cooled cake display cabinets are upgraded refrigeration equipment. Working on a principle similar to air conditioners, fans circulate cold air inside the cabinet to achieve uniform cooling, making them the mainstream choice for bakeries.

Disadvantages of air-cooled cake display cabinets:

First, the purchase price is relatively high. The complex internal structure and precise components lead to much higher procurement costs than direct-cooled models, requiring larger upfront investment.

Second, the fan continuously removes moisture inside the cabinet. Cakes stored for a long time tend to have dry, dehydrated and wilted surfaces.

Third, higher operating noise and energy consumption. The fan generates slight noise and consumes more electricity, resulting in slightly higher long-term operating costs. Meanwhile, air ducts and fans tend to accumulate dust and require regular cleaning; otherwise, the refrigeration effect will deteriorate.

In practice, small shops with low foot traffic that mainly sell room-temperature cakes should prioritize direct-cooled cake display cabinets for high cost performance and low operating costs. For chain bakeries and busy stores with heavy customer flow, air-cooled cake display cabinets are a must. Their stable refrigeration improves the store’s product presentation quality.
